Coconut Cereal Bars

When using brand name products, I check the ingredients every single time I buy it, just to make sure ingredients didn’t get added or changed.

I wanted to make a cereal bar for my son’s birthday (he wanted a bunch of cookies instead of cake), and I was so excited to make dairy-free caramel. Who knew that coconut milk yogurt had so many uses? I had a lot of fun licking out the bowl after making these! 

1 c. Rice Chex© cereal

1 c. Crispy Brown Rice© cereal

1 c. flaked unsweetened coconut

½ tsp. sea salt

½ c. coconut milk yogurt

½ c. Lyle’s Golden Syrup©

½ c. sugar

In large mixing bowl, combine cereals, salt, and coconut.

In saucepan, combine yogurt, golden syrup, and sugar. Cook over medium heat until it reaches 240°F (soft ball stage). Remove from heat. Pour onto cereal mixture, coating evenly. Press into 9x9x2″ pan. Cool. Cut into squares.

Dessert; no soy, no potato, no corn, no shellfish, no tomato, no gluten, no citrus, no milk, no berries, no nuts, no chocolate, no legumes, no egg, no wheat.
