Sweet

My mother used to make a recipe called “Apple Mallow Yam Bake” every year for Thanksgiving. My son and daughter can’t have the apples, and neither of them can have the same kind of marshmallow, so I made a reasonable facsimile without those ingredients.

 2 large sweet potatoes, peeled, diced, and boiled for 5 minutes

2 tsp. cinnamon

½ c. walnuts, chopped (optional)

4 Tbs. coconut oil

3 Tbs. maple syrup

½ c. palm sugar

Mix all. Place in casserole dish. Cover. Bake at 350°F for 30 minutes.

Side Dish; no wheat, no potato, no milk, no tomato, no citrus, no chocolate, no corn, no gluten, no shellfish, no legumes, no berries, no egg, no soy; gluten-free, GFCF, vegan.
